How do you make smothered chicken
Hi Claudette! Smothered chicken one of my favorite chicken dishes! After frying your chicken, leave about 1/4 c of your frying oil in your skillet, brown bits and all! Over a medium flame, add a tablespoon of flour and blend it into the oil until all dissolved. You are looking for a loose paste, kind of like creamy peanut butter. If your oil, flour blend needs more flour to make your peanut butter (roux), add more a tablespoon at a time. If it gets too thick, add a little butter or oil to loosen it up. Turn flame to low and allow your roux to brown until it reaches a medium brown (caramel) color. Once you have the desired color and consistency, turn flame back up to medium until roux starts to bubble. Briskly stir in 3 cups chicken broth with a whisk, until gravy is smooth and starts to thicken. Add your desired seasonings to gravy. 1/2 tsp each of salt, black pepper, paprika, garlic powder & onion powder… add your favorite fried chicken seasoning including cayenne if you like a little heat! Add fried chicken back into the gravy allowing it to cover or “smother” the chicken. Simmer chicken in gravy 15-20 minutes, until chicken juices run clear and meat is starting to fall of the bone. Serve with white rice, noodles or masked potatoes. Also great with hot, homemade biscuits! Enjoy!!!
